Tomatoes are such a popular and diverse fruit (although some people think that it is a vegetable), and there are so many recipes that contain tomatoes, that it is difficult to narrow down favorite recipe choices. Tomatoes are used in spicy dishes, savory meals, and even beverages. They can be enjoyed at any time of the day. They can be fresh, canned, or jarred. Tomatoes can be served hot, cold, whole, chopped, pureed, sliced, and many other ways, too. Tomatoes are really an amazing food. Below are just a few recipes that include tomatoes. You may find one, or more, of these appealing to you, or you will have no trouble finding other recipes that involve tomatoes either online or in countless cookbooks.
We will begin with a warm Tomato Soup:
- 46-ounce can tomato juice
- 8-ounce can tomato sauce
- ½ cup water
- 1 Tablespoon bouillon granules
- ¼ cup celery, finely chopped
- ¼ cup onion, diced
- ½ teaspoon basil
- 2 Tablespoons sugar
- 1 bay leaf
Combine all ingredients in crockpot/slow cooker, and stir well. Cover and cook on low 5-6 hours. Remove bay leaf before serving.
Next, we have a recipe that can be spicy or mild, depending on your personal taste.
Pico de Gallo:
- 12 Roma tomatoes, diced
- 1 large onion, diced
- ½ bunch cilantro, finely chopped
- 1-2 jalapeno peppers, seeded and chopped (This provides the “heat”. You choose how much to include.)
- Juice of 1 large lime
- ½ teaspoon salt
Combine all ingredients in one large bowl, and mix them all together. Refrigerate until ready to serve.
Now, we will include an adult beverage, the Bloody Mary:
- 1.5-ounce Vodka
- 3-ounces tomato juice
- 1 dash lemon juice
- ½ teaspoon Worcestershire sauce
- 2-3 drops Tabasco sauce
- Sprinkles of salt and pepper
Combine all ingredients in a beverage shaker with a lid. Strain and pour over ice cubes, and serve with a wedge of lime.
Last, we offer a true Southern treat, Oven-Fried Green Tomatoes:
- 4 green tomatoes, sliced
- ½ stick butter
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup flour
Preheat oven to 400 degrees. Melt butter in a cast-iron pan, then stir in salt and black pepper. Coat the sliced tomatoes with flour, and place them in the pan. Bake in the oven for approximately 8 minutes. After baking, turn the oven to broil for about 2 minutes, in order to brown the tops of the tomatoes.
